• Sugar-free Sweets Recipe for Diwali| Oats and Dates Gunjiya Recipe

    Diwali is a festival of lights, fun and food. On this particular day people invite friends and relative at home, exchange gifts and the host throws a grand feast where sweets are a must have. The sweet items can vary from kaju barfi, boondi ladoo, kheer, gulab jamun, sandesh, malpua, gunjiya etc. Sweets are among the most craved food items by people of all age groups. Starting from kids to the old people who have crossed the threshold of 60 sweets are special thing that can’t be missed. However just like not all sounds are music but some our noise too, similarly not all sweets are really health-wise healthy.  Therefore let’s take a dig on how can we make really healthy sweets that are sweet and yet doesn’t kill the diabetic. You might be wondering does a sugar free sweet really exist. Let’s explore Oats and Dates Gunjiya recipe that is a rich source of sweetness this Diwali.

    Preparation Time: 11-15 minutes| Cooking Time: 31-40 minutes| Serves: 4

    Ingredients

    • Refined flour (Maida) 2 cups
    • Rice bran oil for deep-frying and greasing

    For Filling

    • 1 cup oats
    • 1/2 cup dates chopped
    • 10 cashew nuts chopped
    • 10 almonds chopped
    • 10 walnuts chopped
    • 20 Raisins
    • 1 tablespoon white sesame seeds toasted

    Steps for Preparation

    • For preparing the outer layer of the gunjiya take maida into a bowl. Rub three tablespoon rice bran oil with the flour. By mixing water knead the maida into a stiff dough and cover it with a damp cloth and leave it aside.
    • Mix all the ingredients of the gunjiya filling together that comprise of oats, dates, cashew nuts, almonds, walnuts, raisins and sesame seeds. Divide the filling into equal parts and as many in number as the number of gunjiyas you aim to prepare.
    • Grease your palms with some rice bran oil and make small balls out of the mixture
    • Take a gunjiya mould and grease it with oil
    • Make small puri out of dough balls and place one in the mould to press it lightly. A space for stuffing the filling is created where you can stuff the fillings.
    • To close the mould use water at the edge of the mould and press it to close it. To avoid the gunjiyas from drying keep them covered with a damp cloth
    • To fry the stuffed gunjiyas, heat sufficient rice bran oil in a kadai and deep-fry golden gujiyas on medium heat.
    • Once fried drain the extra oil from gunjiyas on absorbent paper and serve to your family, friends and relatives.
